Do you feel like cooking today? Yes. Great! Today I am going to show you how to cook a traditional Slovenian dish called “Sweet tarragon pie” in English. For the dough we need:
Dough
500 g gluten-free flour
350 ml of tepid water
1 egg
2 tablespoons of oil
2 tablespoons of sugar
a pinch of salt
And for the filling we need:
Filling
500 g of cottage cheese
200 g sour cream
1 egg
3 tablespoons of chopped tarragon
1 sachet of vanilla sugar
How long do we have to prepare it? Well, it takes about 45 minutes to prepare the dough and the filling and about 35 minutes to cook it, so 80 minutes altogether.
And here are my instructions how to cook it:
1 Use gluten-free flour, water, eggs, salt, sugar and oil to knead dough. Shape the dough into a ball, grease it with oil, place it in a bowl, cover it with some cloth and let it rest for at least half an hour.
2 The filling: Put the cottage cheese into a bowl; add an egg, vanilla sugar and sour cream. Mix well all the ingredients. Stretch the dough on a floured cloth to be thin, smooth and elastic. Cut away the thicker ends. Spread the filling evenly on the dough. Chop the tarragon and sprinkle it over the filling.
3 With the help of the kitchen cloth roll the dough into the roll again, put it into a well-wrung wet cloth, and tie its edges. Pour water into a larger pot, add salt and boil it. Place the roll pie with a kitchen cloth into the boiling water and cook covered for 20 minutes on low heat. Remove the pot from the cooker and leave the roll pie for 15 minutes in water to cool and firm.
4 Take the roll pie from water, unroll it from the kitchen cloth and cut it to pieces. Serve it on a plate and garnish with a tarragon twig.
